a nice routine

It has been already 3 weeks that I have last blogged. It has been a busy time for me. There was a Women's Day that I had to teach in and take part of, I have been teaching some workshops and I just started another workshop with a group of people which will continue on an on going basis for a while. I am also in the process of moving my business to a new location where I will have more space for doing workshops and seeing my clients for individual consultations. I am really exhited about this, but it has left me with less time to write on this blog.

In the end there are not many changes anymore. I have quietly slipped into a nice and comfortable routine. I find that I have no more cravings for "whatever". In the beginning I did not necessarily have cravings for something tangeable, but in the end I was looking for something, whatever it was. I first missed my cheese a lot, or at least the habit of eating cheese certain times of the day, but I have started to add Nutritional Yeast to some of my "normally covered with cheese" dishes and that is really nice. It is not the same as cheese, but I do not miss it at all, I like the taste of this yeast.

I also ended up going overboard in eating starches. They happen to be real grains and whole grain foods, but I ate this a lot more than I was used to and the little "rolls" started to appear.

So now I have eliminated a lot of that as well and find myself eating a lot more vegetables, and feel a lot better with all this. So what do I eat on any given day?

I start out, usually with a vegetable soup. I love something warm in the morning and any kind of soup will do. It is easy to warm up, since I make a large quantity one day a week and put it all in the fridge in jars. I just take out what I need for the morning and voila, breakfast is served.

For lunch I usually have a large salad, look at the cabbage salad, it is one of my favorites. I also like the "greek style" salad. I like to play with them as they change regularly depending on which ingredients I have in my kitchen. I add legumes to my salads on a regular basis and since I slowly introduced them to my diet, I have now problems with the side effects that legumes can create.

Dinner is usually lots of vegetables and some potatoes, white, sweet or yams, or some brown rice or quinoa. But the starches are in lesser amounts than the veggies. I eat a lot of stir-fries and deal with seeds and nuts in those.

Snacks I have in between quite often and use fruits for that or things like carrot sticks or snow peas. These are lovely snacks, quick, easy to snack on in the car, and very fulfilling.
I find I do well with this kind of diet and feel healthy and energetic. I am not needy in anything at this point. On the days that I do feel I need something I might make myself a whole grain sandwhich with hummus and pesto, or I will put some almond butter on the bread, but this happens maybe once every 2 weeks and after that I am just fine again.

I am experimenting with a salad with cooked whole grains (other than rice) in it and as soon as it is yummy enough, I will share that recipe with all of you.
